Recipe - Solo Salad (Goat's Cheese, Green Beans, Tinned Pear, Lamb's Lettuce, Lime, Olive Oil)
My most enthusiastic salad recipe.
Hello! This recipe sits beside Episode 12, ‘The Philosophy of Loneliness’ which will be published in the next few days, so you have a couple of days to gather your ingredients if you’d like to cook/eat along whilst listening to the podcast.
Despite being a FULLY GROWN ADULT, I still have to trick myself into eating salads. I guess I always feel like I need to DO something to my food (like cook it or marinade it or fry it or boil it). To encourage myself to eat more of them, I often make myself salads (like this one) which have loads of STUFF in them, I can’t handle a mostly-leaves situation. In Episode 12 my guest, Axel Seeman, tells me that salads are his ideal food and that he makes one for himself almost every day. To match his enthusiasm for las ensaladas, I thought I’d crack out one of my current favourites and, dare I say it FUNNEST of salad recipes (it’s the lime, isn’t it?). I’m having a love affair with tinned things at the moment (more on that some other time), which is why I’ve included tinned pear to the mix, but grilling fresh pear is also encouraged. I hope you enjoy your salad for one!
Time: 10 minutes
Makes: Enough for one salad and one person
Faff Level: 1
Ingredients:
A handful of lamb’s lettuce or other such soft, mild leaf
A handful of green beans (I clean up the ends of mine so they look nice. Also, some people like to fry these a little, I would say the fresh crunch is better but it’s your life, you’re salad).
1 tbsp of goat’s cheese, curled on a spoon
2 x tinned pear halves. Or half a fresh pear.
The juiciest, limiest lime you can find and half of its zest
Glug of olive oil
Cracked black pepper and flakey salt
Directions:
1. Fry/Grill the pears until they are browned.
2. Mix the olive oil, salt, pepper and lime juice to make a dressing.
3. Assemble your salad as you see fit, add the dressing and sprinkle over lime zest.
